There is a ban on in-car video on Touristfahrten sessions. You can use a camera on private track days. Here are some of my favourite videos from Youtube.com. Please feel free to suggest more by posting the URL in the Comment box below. Also have a look at the new Drivers section where I have collected some Youtube videos about great drivers.
My favourite instructional video, by John Felstead
High quality contemporary footage of a Porsche GT3 chasing a Corvette C6. Chase videos are great because you get a sense of how much cars roll, yaw, jump, and generally get punished when driving fast on the Ring. The video starts in the parking lot and you can see it go through the toll barriers. This is a private track or test day; there is no overtaking on the right during Touristfahrten. (lap)
If you think Touristfahrten traffic is bad, take a look at this Falken Motorsports 997 GT3R in the 2011 Nurburgring 24hr

Classic but grainy film of the Ruf CTR "Yellowbird" driven hard around the ring (lap)
Official GM video of the Corvette C6. The driver commentates with corner names (lap)
The best video game footage I've seen of the Nordschleife (lap)
